This recipe makes a ton of salsa, but I’m a fan of making in bulk so I don’t have to cook as often! Enjoy!
1 28 oz. can of Hunts diced tomatoes (w/ roasted garlic)
1 15 oz. can of Hunts diced tomatoes (regular)
1 small can of Green Giant Sweet Corn Niblets
1 small can of pitted black olives
1 small can of mild green chiles
Chopped fresh green onion (to taste…I use about 1/2-3/4 cup)
Chopped fresh cilantro (to taste…I use about 1/2 cup)
Salt (to taste…I use about 1/2 tsp.)
Tabasco/Cayenne Pepper/Hot Sauce (to taste…I usually use none cuz I like the flavor of the veggies by themselves!)
Optional: Add Cumin, Lime Juice, and/or Chili Powder to taste.
Mix above ingredients in a bowl, stir. Put in blender (can only fit about 1/2 mix at a time) and blend to desired consistency. Serve w/ tortilla chips. YUM!!!

Stupid California. It is impossible to find Hunts canned tomatoes in this place. So, I bought this other brand and made the salsa. It tastes good…but it’s not excuisite. Mmmmmm…sort-of-okay-could-have-been-better-salsa….
